We're a relatively new coffee company passionate about making great coffee available to everyone with little time between the roaster and the customer.&lt;br /&gt;&lt;br /&gt;Persnickety Tim's originally opened from 1996-1998 as a tiny coffee drive-thru in the parking lot of the Lake Air Mall in Waco, Texas. We subsequently reopened in 2002 as a completely web-based coffee roaster. We chose the web over other methods of distribution such as grocery store shelves because taking orders straight from the customer allows us to roast the coffee here and ship it the next day to someone's house or business.&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://photos1.blogger.com/blogger/7689/1816/1600/green_coffee.jpg"&gt;&lt;img style="margin: 0pt 10px 10px 0pt; float: left; width: 101px; cursor: pointer; height: 80px;" alt="" src="http://photos1.blogger.com/blogger/7689/1816/320/green_coffee.jpg" border="0" /&gt;&lt;/a&gt;For those who aren't familiar with what coffee goes through to become that lovely brown bean ready to be ground and brewed, let me briefly explain the process. Coffee actually starts out as cherries on the &lt;a href="http://en.wikipedia.org/wiki/Coffea"&gt;coffee plant&lt;/a&gt;. Each cherry, after being processed and dried, yields two green coffee beans (over to the left). These green coffee beans are what coffee roasters import. Green coffee beans can last a long time -- months and sometimes years -- without losing any flavor (of course, we don't keep them that long here).&lt;br /&gt;&lt;br /&gt;Once roasted, however, coffee undergoes dramatic changes which cause it to lose flavor quickly. Roasted coffee keeps its best flavor for only a couple weeks when stored with care. Many people hear this and think the truth is being exaggerated, but just try to prove this wrong -- get some fresh coffee (Persnickety Tim's, anyone? :-&gt;), let it sit for a month, and brew it &amp; taste it... then get some fresh stuff and compare. Once you get used to great coffee that's fresh from the roaster, the old stuff will taste like dirty water.&lt;br /&gt;&lt;br /&gt;Anyway, all this is to say, we think the web is the best way to get consistently great coffee to people fast. He started roasting coffee in college and has been hooked ever since.
